What Lun describes is what makes that scene feel like it has a different kind of meaning than when Lilah was stoned to death. When the Guided stoned her to death, it was simple human ignorance and hatred of those that are different that killed her. When the birds that she fed in life start eating her, it says that not even the forces of nature can keep themselves from ravaging her body, instead of simply letting her corpse rot in peace, amidst the ruins.
Of course, you're right that there could be something more to it than that, but I think the symbolism is all there is to it.
